You're absolutely right. Every scientific theory has it's range of applicability. I explored it in my talk "The Earth if Flat" making arguments very similar to yours. "We believe that the Earth is round not because it’s the truth, but because we are lazy and stingy (or, to give it a more positive spin, efficient and parsimonious)."
